The CoquusAid paring knife fruit knives is a small kitchen knife with a 3.75 inch blade. Cooks use a knife like this for peeling, trimming and other short jobs.
The blade is high carbon stainless steel, described as German molybdenum-vanadium steel with a hardness of 56+ HRC. CoquusAid says that hardness keeps the edge sharp through heavy use.
The edge is plain, and double hollow dimples in the blade let food fall away instead of clinging. The black ABS handle runs full tang, and the shape is meant to sit balanced in the hand.
A safety arc at the blade root and handle keeps fingers clear of the edge. When the knife is laid down, the blade hangs 0.35 inches above the table.
Use it for slicing fruit, dicing vegetables, peeling skins or taking out avocado pits. The slim blade fits standard wooden knife blocks and magnetic racks, which keeps it stored and out of reach of children.
